Old Fashioned Oatmeal Cookies
A good, ol' fashioned recipe for oatmeal cookies, quick and easy to whip up using ingredients you most likely already have on hand.
I am a big fan of oatmeal. I have a bowl of oatmeal for breakfast probably every other day. So, these old fashioned oatmeal cookies are right up my alley! Similar to any old oatmeal cookie recipe, but with a pinch of nutmeg, and a little extra vanilla, it makes these ones a real treat. Try to not overcook them, as they will get hard if you do. Just cook them until they are golden brown. Enjoy with a glass of cold milk. Yum!
Preheat oven to 350 degrees. Cream butter and sugar in mixing bowl (I use my Kitchenaid mixer) until smooth. Add the eggs and vanilla and beat until fluffy, making sure to scrape the sides of the bowl. Add the flour, baking soda, salt, cinnamon, and nutmeg. Mix well. Add the oatmeal and mix until completely combined. Scoop rounded, tablespoon size balls onto ungreased baking sheet. Bake 10-11 minutes, or until edges are golden brown. Cool on wire rack.
- 2 sticks butter
- 1/2 cup sugar
- 1 cup packed, light brown sugar
- 2 eggs
- 1 Tbsp vanilla
- 1 1/2 cups unbleached, all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- pinch of nutmeg
- 3 cups of oatmeal
